Industrial applications: the production of sucrose-free chocolates with conventional methods requires a lot of time and energy. Recently, using alternative methods for chocolate production has been raising interest in many small industries. This study proposed a ball mill method for the preparation of sucrose-free milk chocolates with physiochem. properties almost ranging in the standard limit defined for chocolate. Although using the ball mill method presents a more cost-effective technique for chocolate production and provides shorter processing times for small chocolate industries, it seems to be less efficient in evaporating moisture than the conventional processing. Challenges are still ahead for upgrading this alternative technique to be efficient in evaporating more moisture during operation ending in a high quality product. The present research investigated the aggregation behaviors of different levels (4, 8 and 12%) of incorporation of sucrose, isomalt and maltodextrin to pre or post- ultrasonication (400 W, 10 min at 60 °C) by fourier transform IR spectroscopy (FTIR), microstructure by SEM (SEM), water absorption, pasting by rapid visco anal. (RVA), and thermal by differential scanning calorimetry (DSC). FTIR results showed that the aggregation process between polyol and starch after ultrasonication is more effective than before ultrasonication owning to more hydroxyl groups of polyols are engaged with the hydrogen bonds of starch which is more pronounced peaks at 1500-1750 cm-1, 1700-2700 cm-1 and 3000-3700 cm-1. These findings are in line with the results from SEM anal. The spots, deformations and crosslinking created by the polyols were more significant after ultrasound assisted pregelatinizion. Impact intensity of polyol on starch granule was reduced in the following order: isomalt > sucrose > maltodextrin. RVA profiles showed that through the incorporation of polyols after sonication, were higher in samples pregelatinized in comparison with those before sonication.

The outstanding benefits of and strong interest in the inland low-salinity culture of penaeid shrimp have led to the growth of this industry worldwide. This study aimed to explore the effects of dietary fatty acids on shrimp in low-salinity culture. Individuals of the marine white shrimp Litopenaeus vannamei were fed one of three diets (coconut oil, fish oil, or an equal mixture of both) of differing fatty acid profiles for eight weeks while being maintained at two different salinities (3 or 30 psu). Then, a GC-TOF/MS-based metabolomics anal. was performed to reveal the regulatory roles of fatty acids in shrimp growth, survival and osmoregulation at two salinities. The shrimp fed the mixed oil diet had higher weight gain and survival, and those fed the diet with only fish oil added exhibited higher unsaturated fatty acid levels in the gills and hepatopancreas irresp. of salinity. Na+/K+-ATPase and total ATPase activities were lowest in the shrimp fed the mixed oil diet at both salinities. When coconut oil was the only lipid source, shrimp tissues contained higher tyrosine, lysine and serine levels at 3 psu than at 30 psu. In contrast, the shrimp fed fish oil as the sole lipid source had higher glucose at 3 psu than at 30 psu. This study indicates that appropriate supplementation of dietary unsaturated and saturated fatty acids can improve shrimp osmoregulation capacity and thus promote shrimp growth and survival in low-salinity water.

The reduced production of ovarian hormones is considered to be the cause of an increase in the incidence of heart disease in women after menopause. Phytoestrogens are found in various herbal sources and are considered as an alternative to hormone therapy because of structural similarity with estrogen. Elaeagnus angustifolia L., known as Senjed in Persian, is used in Iranian traditional medicine with various medicinal properties, contains valuable compounds, including two types of phytoestrogens. The aim of the present study was to investigate the efficacy of E. angustifolia fruit on the cardiovascular function, lipid and glycemic profiles in postmenopausal women. In this double-blind placebo-controlled clin. trial, 58 postmenopausal women were randomly assigned into two exptl. groups of medicinal herb (15 g/day of the whole E. angustifolia fruit powder) and placebo (15 g/day of isomalt + corn starch). Before the trial and after 10 wk of the treatment, cardiovascular function (heart rate, blood pressure), serum glycemic profile (fasting blood glucose; glycated Hb, HbA1C), insulin and lipid profile (total cholesterol, TC; triglyceride, TG; LDL-C and HDL-C) were measured. Heart rate, and serum level of LDL-C and HDL-C significantly decreased after treatment with E. angustifolia. Changes in glycemic profile were not clin. significant. In addition, some studied biochem. parameters significantly changed in the placebo group. E. angustifolia was somewhat effective in improving cardiovascular function and lipid profile, as well as the overall health of postmenopausal women. However, the use of isomalt and corn starch in menopausal women needs further investigation.

We applied a combination of metabolomic and lipidomic profiling approaches as well as microscopic techniques to identify and characterize the key pathways involved in de novo lipid accumulation from glucose in batch cultured, wild-type Y. lipolytica. To investigate the effect of pollination on the fruit quality of ‘Dangshan Su’ pear, ‘Dangshan Su’ was fertilized by the pollen of ‘Wonhwang’ (Pyrus pyrifolia Nakai.) (DW) and ‘Jingbaili’ (Pyrus ussuriensis Maxim.) (DJ). The anal. of primary metabolites was achieved through untargeted metabolomics, and the quant. anal. of intermediate metabolites of lignin synthesis was undertaken using targeted metabolomics. The untargeted metabolomics anal. was performed via gas chromatog.-mass spectrometry (GC-MS). The targeted metabolomics anal. was performed using ultra-high-performance liquid chromatog.-tandem mass spectrometry (UPLC-MS/MS) under the multiple reaction monitoring (MRM) mode. The results showed that the metabolite content was significantly different between DW and DJ. Compared with that in DJ, the sugar and amino acid content in DW was higher and the fatty acid content was lower at 47 days after pollination (DAPs), and the sugar, amino acid, and fatty acid content in DWwas lower at 63 DAPs. The intermediate metabolites of lignin synthesis were analyzed using the orthogonal partial least squares discriminant anal. (OPLS-DA) model, and the differential metabolites at 47 DAPs were p-coumaric acid, ferulic acid, sinapaldehyde, coniferyl alc., and sinapyl alc. The differential significant metabolite at 63 DAPs was p-coumaric acid. At 47 DAPs and 63 DAPs, the p-coumaric acid level was significantly different, and the p-coumaric acid content was pos. correlated with lignin synthesis. The pollination pollen affects the quality of ‘Dangshan Su’ pear fruit through regulation of the sugar, amino acid, and fatty acid content; at the same time, regulating the levels of intermediate metabolites of lignin synthesis, especially the p-coumaric acid content, to affect lignin synthesis ultimately affects the stone cell content and improves the quality of the pears.

The metabolome of a plant comprises all small mol. metabolites, which are produced during cellular processes. The genetic basis for metabolites in nonmodel plants is unknown, despite frequently observed correlations between metabolite concentrations and stress responses. A quant. genetic anal. of metabolites in a nonmodel plant species is thus warranted. Here, we use standard association genetic methods to correlate 3563 single nucleotide polymorphisms (SNPs) to concentrations of 292 metabolites measured in a single loblolly pine (Pinus taeda) association population. A total of 28 single locus associations were detected, representing 24 and 20 unique SNPs and metabolites, resp. Multilocus Bayesian mixed linear models identified 2998 addnl. associations for a total of 1617 unique SNPs associated to 255 metabolites. These SNPs explained sizeable fractions of metabolite heritabilities when considered jointly (56.6% on average) and had lower minor allele frequencies and magnitudes of population structure as compared with random SNPs. Modest sets of SNPs (n = 1-23) explained sizeable portions of genetic effects for many metabolites, thus highlighting the importance of multi-SNP models to association mapping, and exhibited patterns of polymorphism consistent with being linked to targets of natural selection. The implications for association mapping in forest trees are discussed.

There has been an increasing influx of nanopesticides into agriculture in recent years. Understanding the interaction between nanopesticides and edible plants is crucial in evaluating the potential impact of nanotechnol. on the environment and agriculture. Here the authors exposed lettuce plants to Cu(OH)2 nanopesticides (1050-2100 mg/L) through foliar spray for one month. Inductively coupled plasma-mass spectrometry (ICP-MS) results indicate that 97-99% (1353-2501 mg/kg) of copper was sequestered in the leaves and only a small percentage (1-3%) (17.5-56.9 mg/kg) was translocated to root tissues through phloem loading. Gas Chromatog.-Time-of-Flight Mass Spectrometry (GC-TOF-MS) based metabolomics combined with Partial Least Squares-Discriminant Anal. (PLS-DA) multivariate anal. revealed that Cu(OH)2 nanopesticides altered metabolite levels of lettuce leaves. Tricarboxylic (TCA) cycle and a number of amino acid-related biol. pathways were disturbed. Some antioxidant levels (cis-caffeic acid, chlorogenic acid, 3,4-dihydroxycinnamic acid, dehydroascorbic acid) were significantly decreased compared to the control, indicating that oxidative stress and a defense response occurred. Nicotianamine, a copper chelator, increased by 12-27-fold compared to the control, which may represent a detoxification mechanism. The up-regulation of polyamines (spermidine and putrescine) and potassium may mitigate oxidative stress and enhance tolerance. The data presented here provide a mol.-scale perspective on the response of plants to copper nanopesticides.

In order to assist sustainable agriculture, new strategies and methods are being used based on the utilization of new natural mols. These natural compounds can be used as potential natural crop protectors and growth promoters, and the elucidation of their modes/mechanisms of action can represent a big step towards cleaner agriculture free of agrochems. In the present paper, the mechanisms underlying the effects of exogenous resveratrol (R), a natural phytoalexin found in plants, on Lactuca sativa metabolism were investigated through physiol. and metabolomic approaches. The results highlighted that R stimulates the growth of lettuce. A reduction of the O·-2 production in R-treated seedlings and an increase in the photosynthesis efficiency was observed, indicated by a higher Fv/Fm. The metabolomic anal. of lettuce seedlings treated with R identified 116 metabolites related to galactose, amino acids, sugar and nucleotide sugar, and ascorbate and aldarate metabolisms Increased content of some polyamines and several metabolites was also observed, which may have contributed to scavenging free radicals and activating antioxidant enzymes, thus reducing oxidative damage and improving PSII protection in R-treated seedlings.

Herein, the dosage effect of limonene on the P. digitatum spore germination and its regulatory mechanisms were investigated.
