Iberian cured ham from purebred pigs fattened on grazing acorns is a highly appreciated product. There are several anal. methods to avoid its labeling fraud; however, these require opening the ham. The aim of this work is testing a non-destructive sampling method which does not spoil the phys. integrity of the ham. It consists of a puncture with a needle imitating a traditional olfactory system. After removing the needle impregnated with fat, its volatiles are analyzed with a Gas Chromatog. (GC) coupled to Ion Mobility Spectrometry (IMS). The potential of this methodol. was studied analyzing 156 Iberian hams from pigs under two different feeding regimes (acorns vs. feed) and from different breed (Iberian vs. Duroc crossed). Intensity of GC-IMS plot features was extracted and chemometric differentiation models were obtained; one for feeding regime and another for breed, providing validated classification rates of 91.7% and 100%, resp. In addition, 29 features used for construction of both models were tentatively identified using chem. standards The suitability of the method for quality control anal. was characterized by means of a precision study. As a conclusion, GC-IMS becomes a useful tool to guarantee dry-cured Iberian ham authenticity and detect labeling fraud.

Three Shewanella baltica strains (ABa4, ABe2, BBe1) were inoculated into sterile fish sticks and broths, and the metabolic changes during chilled storage were determined using NMR. Totally 39 metabolites in two fish models were identified, which were involved in four main metabolic pathways: peptide and amino acid, nitrogen, nucleotide, and carbohydrate pathways. In fish sticks, proteins were hydrolyzed to increase amino acids (up to 230%) by S. baltica, especially by strain ABa4. In both fish sticks and broths, S. baltica induced the formations of biogenic amines from amino acids and trimethylamine-N-oxide (TMAO), and the degradations of adenine nucleotides to form inosine and hypoxanthine (2- to 4-fold increment). In addition, sugars and lactate were consumed by S. baltica, accompanied with the productions of acetate and succinate. Strain BBe1 showed higher TVB-N and capability of biogenic amine production and nucleotide degradation The changes could be attributed to the enzymes of S. baltica during growth and respiration. These findings confirm that S. baltica has highly spoilage potential to decompose nutrients in fish, mainly via nitrogen and nucleotide pathways. This study provides insight on controlling seafood spoilage by intervening degradation pathways.

The new porous polymer TPDA-1 has been synthesized via solvothermal Schiff base condensation reaction between two organic monomers, i.e., 2,4,6-trihydroxyisophthalaldehyde and 1,3,5-tris(4-aminophenyl)triazine. The TPDA-1 material showed a very high specific capacitance of 469.4 F g-1, at 2 mV s-1 scan rate, together with a high sp. surface area of 545 m2 g-1. It also exhibited excellent cyclic stability with 95% retention of its initial specific capacitance after 1000 cycles at 5 A g-1, suggesting its potential as a high performance supercapacitor. Extended π-conjugation and ion conduction inside the micropores throughout the whole polymeric matrix and high BET surface area could be responsible for this high supercapacitor performance in energy storage device. TPDA-1 has been characterized thoroughly by various electrochem. techniques such as cyclic voltammetry, galvanic charge-discharge, and electrochem. impedance spectroscopy. Our exptl. results suggested a high potential of this porous polymer in energy storage devices for future generation.

Plants are readily exposed to the antibiotics residues in reclaimed water indicating an urgent need to comprehensively analyze their ecotoxicol. effects and fate of these emerging contaminants. Here, we unraveled the dissemination of enrofloxacin (ENR) in a pasture grass, Lolium perenne L., and identified multistage defense systems as its adaptation mechanism. Uptaken concentrations of ENR ranged from 1.28 to 246.60μg g-1 with bioconcentration factors (BCF) upto 15.13, and translocation factors (TF) upto 0.332. The antioxidant enzymic activities such as superoxide dismutase, peroxidase, and catalase were increased by upto 115%. Further transcriptomics demonstrated that differentially expressed genes (DEGs) involved in glycolysis, tricarboxylic acid (TCA) cycle, oxidative phosphorylation, and glutathione metabolism were significantly up-regulated by 1.56-5.93, 3-7 and 1.04-6.42 times, resp.; while, the DEGs in nitrogen and sulfur metabolism pathways were significantly up-regulated by 1.06-5.64 and 2.64-3.54 folds. These processes can supply energy, signaling mols., and antioxidants for detoxification of ENR in ryegrass. Such results provide understanding into fasting grass adaptability to antibiotics by enhancing the key protective pathways under organic pollutant stresses in environments.

The polysaccharide contents of crude LNP, LNP-1 and LNP-2 were 70.60%, 87.71% and 81.20% resp., and the protein contents were 1.72%, 0.97% and 0.68% resp. Their sulfuric contents were 3.39%, 5.02% and 8.64%, and uronic acid contents were 3.66%, 5.56% and 6.80%, resp. Further studies showed that their ability to chelate iron ions, scavenge DPPH (1,1-diphenyl-2-picrylhydrazyl) free radicals and scavenge superoxide anion radicals were 70.09%, 55.94% and 36.64% resp. They showed strong ability to scavenge free radicals in a concentration-dependent manner. LNP is expected to be developed as a new efficacy factor in the food industry.

The development of high-efficient catalysts for the oxidation reaction of sulfides received much attention in recent years due to the extensive applications of such reactions from the utility in pharmaceutical chem. and biol. to the detoxification of chem. warfare agents in war. Herein, the authors report two innovative polyoxometalate-based metal-organic frameworks (POMOFs) {[ε-PMoV8MoVI4O37(OH)3][Zn2(C10N2H8)(H2O)2]2}2·8H2O (1-α and 1-β), which were characterized by elemental anal., UV-visible diffuse reflectance spectroscopy, x-ray single-crystal and powder diffraction, XPS, and FTIR spectroscopy techniques. Single-crystal x-ray diffraction anal. indicates that 1-α and 1-β are polymorphic with the identical compositions and analogical structures. Compounds 1-α and 1-β are both connected by Zn4-ε-Keggin polyoxoanions and 4,4′-bipyridine (bpy) ligands to form twofold interpenetrated three-dimensional POMOF structures. 1-β can be seen as a rotational polymorph of 1-α, i.e., 1-α takes the b axis as the rotation axis and rotates ~39° clockwise to obtain 1-β. Both compounds 1-α and 1-β can be used as heterogeneous catalysts to catalyze the selective oxidation of multitudinous sulfides with H2O2 as an oxidant. When the oxidation of Me Ph sulfide was used as the template reaction, the yield of Me Ph sulfoxide is ∼100% within 30 min by 1-α and 1-β and the oxidant use efficiency is >93%. Gratifying catalytic effects also were achieved in the selective oxidation of Ph and aliphatic sulfide derivatives Simultaneously, both 1-α and 1-β showed an extraordinary degradation efficiency of 2-chloroethyl Et sulfide and have a half lifetime (t1/2) ∼2.5 or 3 min, resp., with 100% selectivity toward the nontoxic product 2-chloroethyl Et sulfoxide and an abnormally high oxidant use efficiency (94.5% for 1-α and 94.3% for 1-β) at room temperature In addition, after seven cycles and continuous cycle catalytic experiments, their structures remained and catalytic activities did not decrease obviously, revealing their outstanding recyclability and structural stability.
