Effect of ethanol on the microstructure and rheological properties of whey proteins: Acid-induced cold gelation

The microstructure and mechanical properties of ethanol-denatured, acid-induced whey protein (WPI) cold-set gels have been monitored by confocal laser scanning microscopy and rheology. As the ethanol concentration increased, the porosity of the gels progressively decreased, with gels prepared at ethanol concentrations of 50 and 70 g/100 g lacking microscopically visible pores. Large aggregates were observed at ethanol concentrations of 70 g/100 g immediately after alcohol addition. A sharp increase in storage modulus was noted at ethanol concentrations between 30 and 50 g/100 g, while the gel strength at 50 g/100 g, was up to three times higher compared to that of heat-denatured gels. In general, the ethanol-denatured whey protein cold-set gels were prone to phase separation. Ethanol-denatured cold-set whey protein gels exhibited mechanical and microstructural properties that may offer alternative means of structuring protein-enriched food formulations and designing novel food products.

Comparative transcriptome analysis reveals the key regulatory genes for higher alcohol formation by yeast at different a-amino nitrogen concentrations

Higher alcohols are important flavor substance in alcoholic beverages. The content of alpha-amino nitrogen (alpha-AN) in the fermentation system affects the formation of higher alcohols by Saccharomyces cerevisiae. In this study, the effect of alpha-AN concentration on the higher alcohol productivity of yeast was explored, and the mechanism of this effect was investigated through metabolite and transcription sequence analyses. We screened 12 most likely genes and constructed the recombinant strain to evaluate the effect of each gene on high alcohol formation. Results showed that the AGP1, GDH1, and THR6 genes were important regulators of higher alcohol metabolism in S. cerevisiae. This study provided knowledge about the metabolic pathways of higher alcohols and gave an important reference for the breeding of S. cerevisiae with low-yield higher alcohols to deal with the fermentation system with different alpha-AN concentrations in the brewing industry.

Using surfactants for controlling rotifer contamination in mass cultivation of Chlorella pyrenoidosa

Frequent microzooplankton contamination such as rotifers in Chlorella mass culture often causes devastating effects on biomass production. In this study, five surfactants were used to control contamination by a rotifer, Brachionus calyciflorus, in Chlorella pyrenoidosa XQ-20044 cultures. Laboratory results showed that the minimal effective concentrations of surfactants for complete control of B. calyciflorus were 7.5, 10, 10, 10, and 15 mg L-1 for primary alcohol ethoxylate, sodium dodecylbenzene sulfonate, sodium alcohol ether sulfate, coconut diethanolamide, and sodium dodecyl sulfate, respectively. However, only 10 mg L-1 sodium dodecylbenzene sulfonate and 7.5-10 mg L-1 primary alcohol ethoxylate had no negative effects on algal growth. Moreover, in a 5 m(2) open raceway pond, 10 mg L-1 sodium dodecylbenzene sulfonate ensured swift and total elimination of rotifers, while the final dry weight of the algae reached >0.74 g L-1 whereas the cost of using sodium dodecylbenzene sulfonate was only $ 0.014. The results of this study indicated that sodium dodecylbenzene sulfonate approach is fast-acting, highly effective, and a low-cost treatment. Therefore, sodium dodecylbenzene sulfonate has great potential for biological contamination control in microalgae mass culture without a negative impact on algal growth.

High performance carbon nanotube/polymer composite fibers and water-driven actuators

Advanced fiber materials made from nanomaterials such as carbon nanotubes (CNTs) have stimulated extensive interest recently; polymer infiltration represents a simple and effective approach to tailor the fiber structure and improve related properties, which deserves more thorough study. Here, we adopted an acid-assisted in situ and scalable polymer infiltration method to prepare continuous CNT/polyvinyl alcohol (PVA) composite fibers, with combined high mechanical strength (up to 2 GPa, and 1.5 GPa at a gauge length of 5 cm) and electrical conductivity (3.16 x 10(5) S/m), superior than most of previous reports. Based on these, we further fabricated uniformly twisted helical CNT/PVA fibers retaining reasonable strengths (similar to 900 MPa) yet significantly enlarging the tensile strains to as high as 95%. Using the hydrophilicity of infiltrated PVA and the designed helical fiber structure, we created water-driven actuators with axial shrinkage reaching 47% of original fiber length. Our high performance CNT/PVA fibers have potential applications in areas such as multifunctional fiber-based electronics, artificial muscles, smart textiles and soft robotics.

Effect of Hericium erinaceus on bacterial diversity and volatile flavor changes of soy sauce

At present, the consumer demand for high-quality soy sauce is growing. Hericium erinaceus, an edible mushroom with many health benefits, was used for soy sauce fermentation. Firmicutes and Proteobacteria were identified as the main phyla, while, Bacillus and Stenotrophomonas as the predominant genera during soy sauce fermentation. H. erinaceus decreased the richness and diversity of bacteria during soy sauce fermentation due to its antimicrobial effect. Especially, Stenotrophomonas, a common opportunistic pathogen, was replaced by Bacillus during soy sauce fermentation by adding H. erinaceus. Moreover, H. erinaceus significantly promoted the esters and alcohols accumulation, and had positively influenced on a sensory constituent. However, pyrazines, ketones, and alkanes were rich in the control samples. Bacillus, Staphylococcus, and Psychrobacter showed a positive correlation to flavor formation with the addition of H. erinaceus. This study provided new insight into regulating the quality and microbial community of soy sauce by changing the raw material ingredients.

Modified Drinking Motives Questionnaire-Revised: Psychometric Validation in a Psychiatric Sample of Young Adults with Predominantly Polysubstance Use

Introduction: Measures of motives for alcohol use provide an important avenue for understanding underlying psychological reasons that drive substance use and predict distinct patterns of use. The Modified Drinking Motives Questionnaire-Revised (MDMQ-R; Grant, Stewart, O’Connor, Blackwell, Conrod, 2007) measures five drinking motives: social, enhancement, conformity, coping-with-anxiety, and coping-with-depression. The MDMQ-R and its predecessors have previously been validated only in non-clinical normative samples. Purpose: Therefore, the present study aimed to validate the factor structure and internal consistency of the MDMQ-R in a diverse psychiatric sample of substance-using young adults that presented with either exclusive alcohol use or polysubstance use. Method: Participants were 255 substance-using young adults (18-26 years; M = 21.17) admitted to the young adult partial hospitalization treatment program at a private psychiatric hospital (62% female; 78% White; 43% students). Results: A confirmatory factor analysis revealed that items loaded on their respective latent factors (ps < 0.01; loadings between 0.50 and 0.90; reliabilities between 0.80 and 0.94). However, goodness of fit statistics were not reflective of model fit found in Grant et al. (2007) in the overall sample, as well as in alcohol-only and polysubstance-using samples. Discussion: Results suggest that the factor structure of the MDMQ-R did not replicate in the present sample. Potential explanations and future directions are discussed in light of the results, including generalizability and clinical utility. If you¡¯re interested in learning more about 5333-42-6. Intimate Partner Violence Among Surgeons: We are Not Immune

Objective: The incidence and risk factors for IPV are not well-studied among surgeons. We sought to fill this gap in knowledge by surveying surgeons to estimate the incidence and identify risk factors associated with IPV. Summary of Background Data: An estimated 36.4% of women and 33.6% of men in the United States have experienced IPV. Risk factors include low SES, non-White ethnicity, psychiatric disorders, alcohol and drug abuse, and history of childhood abuse. Families with higher SES are not exempt from IPV, yet there is very little data examining incidence and risk factors among these populations. Methods: An anonymous online survey targeting US-based surgeons was distributed through 4 major surgical societies. Demographics, history of abuse, and related factors were assessed. Chi-square analysis and multivariable logistic regression were utilized to evaluate for potential risk factors of IPV. Results: Eight hundred eighty-two practicing surgeons and trainees completed the survey, of whom 536 (61%) reported experiencing some form of behavior consistent with IPV. The majority of respondents were women (74.1%, P = 0.004). Emotional abuse was most common (57.3%), followed by controlling behavior (35.6%), physical abuse (13.1%), and sexual abuse (9.6%). History of mental illness, [odds ratio (OR) 2.32, P < 0.001], alcohol use (frequent/daily OR 1.76, P = 0.035 and occasional OR 1.78, P = 0.015), childhood physical abuse (OR 1.96, P = 0.020), childhood emotional abuse (OR 1.76, P = 0.008), and female sex (OR 1.46, P = 0.022) were associated with IPV. Conclusions: As the first national study of IPV among surgeons, this analysis demonstrates surgeons experience IPV and share similar risk factors to the general population. Note that a catalyst decreases the activation energy for both the forward and the reverse reactions and hence accelerates both the forward and the reverse reactions. you can also check out more blogs about 5333-42-6. 3D nanoflower-like layered double hydroxide modified quaternized chitosan/polyvinyl alcohol composite anion conductive membranes for fuel cells

To solve the trade-off problem among ionic conductivity, mechanical and chemical stability of anion exchange membranes (AEMs), quaternized chitosan (QCS) was first prepared and then was blended with polyvinyl alcohol (PVA) to improve mechanical strength of QCS. Afterwards, three-dimensional (3D) hierarchical flower-like layered double hydroxides (LDHs) were prepared via one-pot ethylene glycol-assisted solvothermal method, and then were incorporated into QCS/PVA blend matrix to fabricate composite AEMs. By constructing 3D hierarchical structure, the active sites of LDH nanosheets are fully exposed, thus impressive ion conductivity, alkali and fuel resistant ability of LDH nanosheets can be rationally utilized. The composite membrane displayed the maximum OH- conductivity of 25.7 mS cm(-1), which was 48.6 % higher than that of the pristine membrane. Alkaline stability measurement proved that the composite membranes kept residual ionic conductivity of as high as 92 % after immersion in a 2 M KOH for 100 h. Due to the decreased methanol permeability and increased conductivity, the composite membrane with 6% LDHs content exhibited a peak power density of 73 mW cm(-2) at 60 degrees C, whereas the pristine membrane demonstrated only 40 mW cm(-2).

Effects of algae subtype and extraction condition on extracted fucoxanthin antioxidant property: A 20-year meta-analysis

Algal fucoxanthin as a carotenoid pigment possesses various health benefits, among which, the antioxidant property is one of the most explored. Current research indicated that algal fucoxanthin is generally extracted from different subtypes (microand macro-algae) under varying extraction conditions. However, it lacks information whether algae subtypes and extraction conditions present a remarkable impact on the antioxidant property of the extracted fucoxanthin. In this study, the effects of algae subtype and extraction condition (i.e., extraction solvents, temperature, time, pressure and illumination condition) on fucoxanthin antioxidant property were investigated by performing a meta-analysis. The subtotal standard mean difference (SMD) of the microalgae and macroalgae subtypes were 12.59 (95% confidence interval (CI): 3.63-21.56) and 7.20 (3.44-10.96), respectively, presenting an overlapping range. This suggested that no statistically significant differences existed in the fucoxanthin antioxidant property extracted from two subtypes, which was consistent with the results from the subgroup analysis and meta-regression. Similar observations were found for algal fucoxanthin extracted by alcohols (SMD (CI):7.18 (3.36-11.00)) or alkanes (SMD (CI):11.88 (3.62-20.15)). Moreover, the employed extraction conditions including extraction time (SMD (CI) for >= 60 min vs <60 min: 8.03 (3.55-12.50) and 7.97 (2.49-13.45)), pressure (SMD (CI) for normal vs pressurized: 7.68 (4.00-11.35) and 10.64 (0.21-21.03)), and illumination (SMD (CI) for dark vs normal: 6.91 (2.31-11.50) and 9.45 (4.17-14.73)) showed no statistical influence on fucoxanthin antioxidant property. However, extraction at higher temperature produced stronger fucoxanthin antioxidant property (SMD (CI) for room temperature vs >= 40 degrees C: 31.43 (12.27-50.59) and 7.21 (3.69-10.74)). Additionally, the fucoxanthin antioxidant property exhibited a positive concentration-dependent correlation according to meta-regression analysis. Our findings provide suggestions for fucoxanthin extraction from algae under various conditions and give insights to its application as an antioxidant. As more data become available in the future, data analysis could be updated for more robust comparisons.

Developing the QSPR model for predicting the storage lipid/water distribution coefficient of organic compounds

The distribution of organic compounds in stored lipids affects their migration, transformation, bioaccumulation, and toxicity in organisms. The storage lipid/water distribution coefficient (log K-lip/w) of organic chemicals, which quantitatively determines such distribution, has become a key parameter to assist their ecological security and health risk. Due to the impossibility to measure K-lip/w values for a huge amount of chemicals, it is necessary to develop predictive approaches. In this work, a quantitative structure-property relationship (QSPR) model for estimating log K-lip/w values of small organic compounds was constructed based on 305 experimental log K-lip/w values. Quantum chemical descriptors and n-octanol/water partitioning coefficient were employed to characterize the intermolecular interactions that dominate log K-lip/w values. The hydrophobic and electrostatic interactions and molecular size have been found to play important roles in governing the distribution of chemicals between lipids and aqueous phases. The regression (R-2 = 0.959) and validation (Q(2) = 0.960) results indicate good fitting performance and robustness of the developed model. A comparison with the predictive performance of other commercial software further proves the higher accuracy and stronger predictive ability of the developed K-lip/w predictive model. Thus, it can be used to predict the K-lip/w values of cycloalkanes, long-chain alkanes, halides (with fluorine, chlorine, and bromine as substituents), esters (without phosphate groups), alcohols (without methoxy groups), and aromatic compounds.
