Enantiomer composition of chiral compounds present in traditional Slovak Tokaj wines

In the presented study volatile organic compounds (VOC) profiles of the most valuable products from Slovak Tokaj wine region were characterized using SPME-GC-MS. Identified volatile organic compounds in studied samples of Tokaj selection wines and Tokaj essences belonged to esters, terpenes, higher alcohols, volatile acids, lactones and aldehydes. From identified VOC, chiral compounds were selected, and their enantiomers were separated by heart-cut two-dimensional GC system. Enantiomer separation was optimized, and this advanced method was applied to determine enantiomeric ratios (ER) of studied compounds in 53 traditional botrytized Tokaj wines. Terpenic compounds linalool and limonene were present in ER resembling the racemic mixture, hotrienol expressed the slight dominancy of S-enantiomer (51-82 %) and S-alpha-terpineol varied from 47 to 70 %. Moreover, linalool and limonene were present only in wines of younger vintages. ER of 2,3-butanediol has shown the predominance of 2R,3R-enantiomer in all samples even though reached also values that were not usual for common white wines (55-100 %). Whiskey lactones were identified in all wines aged in oak barrels and exclusive presence of (4S,5S)-cisand (4S,5R)-transenantiomers was confirmed.

Ionic surfactants tend to accumulate in the interfacial region of ultrasonic cavitation bubbles (cavities) because of their surface active properties and because they are difficult to evaporate in cavitation bubbles owing to their extremely low volatilities. Hence, sonolysis of ionic surfactants is expected to occur in the interfacial region of the cavity. In this study, we performed sonochemical degradation of surfactants with different charge types: anionic, cationic, zwitterionic, and nonionic. We then estimated the degradation rates of the surfactants to clarify the surfactant behavior in the interfacial region of cavitation bubbles. For all of the surfactants investigated, the degradation rate increased with increasing initial bulk concentration and reached a maximum value. The initial bulk concentration to obtain the maximum degradation rate had a positive correlation with the critical micelle concentration (cmc). The initial bulk concentrations of the anionic surfactants were lower than their cmcs, while those of the cationic surfactants were higher than their cmcs. These results can be explained by the negatively charged cavity surface and the effect of the coexisting counterions of the surfactants.

Characterization of bio-nanocomposite films based on gelatin/polyvinyl alcohol blend reinforced with bacterial cellulose nanowhiskers for food packaging applications

Bacterial cellulose nanowhiskers (BCNW) were synthesized from Komagataeibacter xylinus (strain K2G30; UMCC 2756) using sulfuric acid hydrolysis and incorporated into a gelatin-polyvinyl alcohol (GL/PVA) blend film matrix. The effect of BCNW content (1-10 wt% of biopolymer) on the microstructural, mechanical, optical, and water barrier properties of bio-nanocomposites was studied. Transmission electron microscopy showed that BCNW had a needle shape morphology with an average length of 600 nm and an average width of 30 nm. The crystallinity index of BCNW was 94.7% using X-ray diffraction. Scanning electron microscopy (SEM) illustrated good miscibility between GL/PVA blend film matrix and BCNW up to 7.5 wt%. Fourier-transform infrared spectroscopy in the attenuated total reflection mode showed molecular interactions between functional groups of the GL/PVA blend film matrix and BCNW. The incorporation of BCNW up to 7.5% into the GL/PVA blend reduced the water vapor transmission rate and water vapor permeability by about 22% and 14%, respectively, while tensile strength, elongation at break, and elastic modulus increased by about 21.5%, 41% and 19%, respectively (p < 0.05). Films transparency was not affected by the addition of BCNW (p > 0.05) suggesting that the BCNW were dispersed uniformly at the nanoscale. All films were colorless (Delta E*<2) with low opacity value (<2) comparable to synthetic plastics. Overall, the characterization of functional properties revealed that GL/PVA blend film reinforced with BCNW could be used as an environmentally friendly packaging material to partially replace or reduce the use of current petroleum-based packaging materials. Construction of graphene oxide membrane through non-covalent cross-linking by sulfonated cyclodextrin for ultra-permeable butanol dehydration

Two-dimensional (2D) lamellar graphene oxide (GO) membranes represent promising porous materials in alcohol dehydration. The separation performance can be manipulated by the physicochemical properties of interlayer channels. The relatively low flux and poor stability of GO-based membranes in aqueous environment are the major drawbacks. Herein, we intercalated a supramolecular compound, sulfobutyl-beta-cyclodextrin (SCD), into the interlayer pores/channels of GO membranes. The sulfonic acid groups on SCD molecules are able to cross-link adjacent GO nanosheets through non-covalent interactions. The GO-SCD membranes possess excellent water affinity due to the presence of high hydrophilic sulfonic acid groups. For the n-butanol dehydration, the GO-SCD/PTFE membranes with well-defined interlayer pores exhibited ultrahigh permeation flux of 12955 g m(-2) and separation factor of 1299 under 80 degrees C. The membranes remained stable in 144 h separation performance evaluation test and exhibited obviously enhanced thermal stability.

Volatile compounds sorption during the aging of Chinese Liquor (Baijiu) using Pottery Powder

Pottery jar is the preferred storage vessel for aging baijiu, Chinese liquor, and it could sorb liquor micro-compounds. The objective of this work was to identify the sorption of liquor micro-compounds onto pottery powder, and gained insights regarding the sorption processes and mechanism. The sorption of liquor micro-compounds onto pottery powder of different sizes was studied using different kinetic models. The results showed that the sorption capacity varied among particle size of pottery powder, which also affected equilibrium time. The sorption process could be well described by the pseudo-second-order model, and the external diffusion was the rate-limiting step. Liquor volatiles in pottery powder at equilibrium were characterized, which detected alcohols, esters, acids, and furan by gas chromatography-mass spectrometry (GC-MS). These findings demonstrated pottery could not only cause subtractive changes that occur to liquor during the aging period, but also as a vector for transferring aromas sorbed when reused.

AimThis study aimed to examine if there is an interaction between alcohol use and human development in terms of their associations with alcohol-attributable health harms. Differences in alcohol-attributable harms per litre of APC between HDI groups were assessed using regression analyses and a reference group of low HDI. FindingsAPC is associated with alcohol-attributable deaths, YLL, YLDs and DALYs lost, while HDI is associated with alcohol-attributable deaths, YLL and DALYs lost. Statistical analyses indicated there is an interaction between HDI and APC in their associations with alcohol-attributable deaths, YLL and DALYs lost per 100000 people. However, no statistical differences between low and very high HDI groupings for these burdens were observed.
