Two experiments were conducted to determine the reduction in viability of the microorganism at graded flour inoculation levels (0, 6.2, 6.7, and 7.3 log10 colony forming units per g (CFU/g)) subjected to extrusion cooking under varied levels of specific mech. energy that were achieved by adjusting the extruder water input (10, 12, and 20 kg/h), and extruder screw speed (400, 500, and 600 rpm). A second experiment was conducted to determine the survival of the microorganism subjected to three dryer conditions (49 掳C for 10 min; 107 掳C for 16 min; and 66 掳C for 46 min).
