To improve enzyme activity, optimize the fermentation conditions and study its enzymic properties, the optimum fermentation conditions were determined by single factor experiments and orthogonal experiments: 0.3% yeast extract, 1.2% agar, pH 8, 28 °C, 0.02% K2HPO4 and 0.02% CaCl2. The optimized enzyme activity was up to 576.25 U/mL, which was 2.05 times compared with that before.
