Fingerprint of aroma-active compounds and odor activity values in a traditional Moroccan fermented butter Smen using GC-MS-Olfactometry

Smen is a fermented Moroccan butter highly regarded for its unique flavor characteristics. For the first time, this study aimed to evaluate the suitability and complementary performance of purge-and-trap extraction (PTE) and solvent-assisted flavor evaporation (SAFE) extraction methods prior to gas chromatography-mass spectrometry-olfactometry (GC-MS-O) in order to characterize key compounds in Smen. According to the representativeness tests, both SAFE and PTE aromatic extracts gave satisfactory similarity and intensity scores and were representative aromatic extracts, being similar to the Smen reference odor. Thirty-four volatile compounds were identified in Smen including acids, alcohols, esters, and ketones. Aroma extract dilution analysis (AEDA) was applied to characterize potent odorants, and odor activity values (OAVs) were calculated to authenticate these compounds. Twenty-two and nineteen aroma-active compounds were revealed by SAFE and PTE methods, respectively, with flavor dilution (FD) factors ranging from 4 to 4096, and OAVs between 1 and 3359. Ethyl butanoate, ethyl lactate, ethyl hexanoate, butanoic acid, and hexanoic acid were the main potent odorants in Smen, producing fruity-rose, creamy-whey, overripe fruit, ripened cheese, and rancid buttery/soapy odors, respectively. Therefore, SAFE and PTE methods were not only representative, but also complementary for elucidating potent aroma compounds of Smen.

Alterations in Insulin Levels in Adults with Prenatal Alcohol Exposure

Objective Evidence suggests that prenatal alcohol exposure (PAE) may adversely impact insulin production and signaling but there is limited information on the range of these effects and their future health consequences. Method A prospective cohort of predominantly African-American individuals identified while in utero and followed into adulthood were used to evaluate differences in various indicators of diabetes, including fasting plasma glucose, hemoglobin A1c (HbA1c), and insulin levels. The homeostatic model assessment of insulin resistance (HOMA-IR) was also computed. Body mass index (BMI) was calculated and normal defined as < 25 kg/m(2). Participants were categorized as having PAE (n = 39) if their mothers drank at least 1 ounce of absolute alcohol per week or more during the 1(st) trimester of pregnancy and as Controls (n = 22) if their mothers reported abstaining from alcohol consumption during pregnancy. Results Mean age of the sample was 36.0 +/- 1.5 years. Indices of glucose metabolism, including fasting plasma glucose and hemoglobin A1c levels, did not vary by group status but insulin levels and HOMA-IR values varied by group status and BMI level. PAE individuals with a normal BMI had lower insulin levels than Controls. However, in PAE subjects, there was a steeper increase in insulin levels relative to their BMI than in Control subjects. A cluster of 5 PAE cases had low levels of insulin and 4 of the 5 had severe cognitive impairment. Conclusions The bidirectional effects on insulin level and insulin resistance associated with PAE may indicate differential rates of diabetes disease impact or differential PAE impact in the brain and peripheral areas involved in insulin production and signaling. Tailoring Multistimuli Responsive Micropatterns Activated by Various Mechanical Modes

A versatile wrinkle-based micropatterned system with a film-substrate structure is proposed, which contains a hydrophilic film of polyvinyl alcohol or its composite with laponite and a hydrophobic substrate of polydimethylsiloxane or its composite with carbon black. The wrinkled system features high design flexibility and multistimuli responsiveness, which can be activated by various mechanical methods, including vertical press or scratch, gentle stretch-and-release, bend, or analogous magneto-mechanical and electro-mechanical modes. The resultant wrinkles possess 1) instantaneous and reversible strain/moisture/light responsive optical modulation; 2) tunable dynamics for the aforementioned strain/moisture/light response;3) tailorable amplitude/wavelength; 4) unique surface morphologies from the coupling of wrinkles and cracks; 5) excellent reversibility and durability. A variety of applications are demonstrated based on this system, including 1) a moisture erasable highly sensitive pressure responsive device and pattern replicator with a high fidelity; 2) a moisture erasable scratch/magneto-mechanical re-writable tablet; 3) an electro-mechanical controllable smart window with an ultra-sensitive strain responsive transmittance modulation and a low operating voltage; 4) various types of strain responsive, moisture erasable, and laser writable information recording/encryption devices. This work provides new routes for designing innovative wrinkled systems triggered by diverse mechanical fashions and can decode multiple environmental stimuli into optical signals for widespread application.

Facile electrolytic synthesis of Pt and carbon quantum dots coloaded multiwall carbon nanotube as highly efficient electrocatalyst for hydrogen evolution and ethanol oxidation

Designing high-performance Pt-based catalysts with low catalysts cost is still a great challenge. Here, we demonstrate a facile electrolysis-solvothermal technique for making Pt and carbon quantum dots coloaded multiwall carbon nanotube (Pt-CQDs/MWCNT) catalyst with the assistant of electric field. Despite of the ultralow Pt amount (0.81 wt%) for the optimized Pt-CQDs/MWCNT catalyst, it exhibits ultrahigh electroactivity and durability toward hydrogen evolution reaction (HER) and ethanol oxidation reaction (EOR). The mass activities of the catalyst for HER and EOR can be achieved to 4889.7 mA/mg (-40 mV) and 4917 mA mg; 1Pt (forward peak), which are 8.1 times and 5.6 times more active than those of commercial Pt/C respectively. The characterization results reveal that Pt nanpparticles (Pt NPs) with intrinsic structure play the key role in excellent catalytic performance for HER and EOR. CQDs not only support abundant anchoring points for fixation and dispersion of Pt NPs, but also construct 3D conductive network with MWCNT supporter for improving the catalytic performance.

Characterization and determination of free phytosterols and phytosterol conjugates: The potential phytochemicals to classify different rice bran oil and rice bran

Phytosterols are important beneficial compounds found in rice bran (RB) and rice bran oil (RBO). Although relationships have been confirmed between the forms of phytosterols and their bioactivities, the analysis of different forms of phytosterols in RB and RBO has been lacking. In this study, high temperature gas chromatography-mass spectrometry (HTGC-MS) was combined with the single standard to determine multicomponents (SSDMC) method to determine free sterols (FSs) and steryl glycosides (SGs) in RB and RBO. High-performance liquid chromatography (HPLC) was used to determine steryl ferulates (SFs). There was clear variation in the composition of FS, SF and SG, indicating that different forms of phytosterols can discriminate between different RB and RBO. The developed method may be also useful for the detection of other compounds of interest in oils, oil seeds or cereals.

One-year Follow-Up Results with Hydrogel Implant in Therapy of Hallux Rigidus: Case Series with 44 Patients

Background The Cartiva implant (CI) is being increasingly used in the surgical therapy of hallux rigidus. Despite a growing number of studies, numerous questions regarding patient selection remain unanswered. Patients and Methods As part of a retrospective case series with prospective follow-up (average follow-up period: 12 months), a total of 44 patients (male/female = 16/28; mean age at the time of surgery: 55.4 years) with 44 CI were analysed (VAS, EFAS-, AOFAS-score). Using a correlation analysis and a machine learning algorithm, risk factors for therapy failure were investigated. Results The overall survival rate of the CI was 93% at 12 months. The VAS, EFAS and AOFAS scores showed a significant improvement in comparison to the preoperative condition. The mobility of the metatarsophalangeal joint showed no increase. Patients with a medium osteoarthritis grade and a medium level of clinical restraint showed the greatest improvement in relation to their preoperative condition. Conclusion The CI can be seen as an effective therapy for hallux rigidus. Nonetheless, realistic patient expectations must be communicated.

Enzymatic hydrolysis and auto-isomerization during beta-glucosidase treatment improve the aroma of instant white tea infusion

The aroma changes in instant white tea resulting from beta-glucosidase treatment was investigated by quantitative descriptive analysis (QDA), gas chromatography-mass spectrometry (GC-MS), odour activity value analysis (OAV), aroma reconstruction and omission tests. The grassy, floral and sweet notes increased significantly (P < 0.05), and the roasted note decreased significantly (P < 0.05) upon beta-glucosidase treatment. Quantitative analysis showed that the concentrations of benzaldehyde, benzeneacetaldehyde, (Z)-3-hexen-1-ol, linalool, phenylethyl alcohol, cis-linalool oxide, trans-linalool oxide, hexanol, hotrienol and (E)-2-hexen-1-ol increased significantly (P < 0.05) after treatment; however, (Z)-3-hexen-1-ol isomerized to (E)-2-hexen-1-ol. OAV analysis, aroma reconstruction and the omission test showed that the grassy, floral and sweet notes increased as the (Z)-3-hexen-1-ol, cis/trans-linalool oxide and benzeneacetaldehyde increased, whereas the roasted note declined under the same conditions. The enzymatic hydrolysis of glycosidic precursors and the auto-isomerization of volatile compounds provide new information for understanding how beta-glucosidase treatment improves the aroma of tea products. Effects of roasting level on physicochemical, sensory, and volatile profiles of soybeans using electronic nose and HS-SPME-GC-MS

We applied oven-roasting on soybean in order to investigate their physicochemical, sensory, and volatile profiles using electronic nose and HS-SPME-GC-MS. Results revealed a temperature dependent kinetic on the physicochemical index except fat content. Roasting at 200 degrees C for 20 min decreased the protein dispersibility index about 38%; while, lipoxygenase and peroxidase were entirely inactivated. The primary heat sensitive amino acids were methionine, arginine, and cysteine. Electronic nose showed certain capacity to discriminate varying roasted soybeans. Out of 41 volatile compounds identified in soybean headspace, 2,5-dimethylpyrazine showed the highest abundance of 411.18 mu g/Kg. Regression model suggested the association of hexanal and aliphatic alcohols with beany flavor, while pyrazines, heterocycles, and furanoids showed a positive correlation with roasted flavor. The selected flavor markers can be used to predict the development of flavor in roasted soybeans. Our study emphasized the effect of roasting level on nutritive value and flavor profiles of soybeans.

Alcohol consumption and risk of stomach cancer: A meta-analysis

Stomach cancer is one of the most common cancers in the world. The relationship between alcohol consumption and the risk of stomach cancer remains unclear. Epidemiology studies investigating this relationship have shown inconsistent findings. A meta-analysis was performed to explore the association between alcohol consumption and increased stomach cancer risk. Eighty-one epidemiology studies, including 68 case-control studies and 13 cohort studies, were included in this study. A significant association was found between alcohol consumption and increased risk of stomach cancer (OR = 1.20, 95% CI 1.12-1.27). To explore the source of the significant heterogeneity (p < 0.05, I-2 = 86%), analysis was stratified by study type (case-control study and cohort study), control type (hospital-based control and population-based control), gender (male, female, and mix), race (White and Asian), region (United States, Sweden, China, Japan), subsite of stomach cancer, and type of alcohol. The stratified analyses found that region and cancer subsite are major sources of the high heterogeneity. The inconsistent results in different regions and different subsites might be related to smoking rates, Helicobacter pylori infection, obesity, and potential genetic susceptibility. The positive association between drinking and increased risk of stomach cancer is consistent in stratified analyses. The dose-response analysis showed a clear trend that a higher daily intake of alcohol is associated with a higher risk of stomach cancer. Wild Chamomile [Cladanthus mixtus (L.) Chevall.] Collected from Central-Northern Morocco: Phytochemical Profiling, Antioxidant, and Antimicrobial Activities

We investigated phytochemicals and biological activities in Cladanthus mixtus essential oil (CMEO) and various extracts. To this end, flowers CMEO microwave-extracted was subjected to chemical analysis using GC-MS. Antimicrobial activities of CMEO and various extracts obtained by maceration and Soxhlet were tested against four microbial strains using agar well diffusion assay and microtitration method. Antioxidant activities were determined, for extracts, using DPPH. CMEO chemical composition revealed 44 compounds. Santolina alcohol (40.7), germacrene D (8.9), and alpha-pinene (5.7%) were the main constituents. The best records of yield, total phenolics, and flavonoids were obtained with Soxhlet and methanol for extracts. Important antimicrobial activities were recorded in CMEO and extracts. For CMEO, MICs ranged from 10.17 (Bacillus subtilis ATCC 3366) to 13.83 mu g/mL (Escherichia coli ATCC 25922). Among extracts, Met-OH was the most efficient with MICs ranged from 11.17 (Candida albicans ATCC 10231) to 15.83 mu g/mL (E. coli). Met-OH extract presented the highest antiradical activity (IC50 = 55.50 mu g/mL), while the n-hexane displayed the lowest one (IC50= 259 mu g/mL). Based on these outcomes, CMEO and various extracts from Cladanthus mixtus flowers could be suggested for their use as potential natural preservatives to enhance foods shelf-life, herbal formulations, and also as antiseptics and disinfectants.
